Ingredients--
1-8 oz package cream cheese, softened
1 cup shredded sharp cheddar cheese, plus more for garnish
1 cup chicken broth
1 Tbls coconut oil or butter
1/4 cup diced onions
1/4 cup chopped celery
4-5oz cans chunk tuna, drained
2 cups hearts of palm, (1 bottle) quartered lengthwise and cut in half
Salt and pepper
1 cup diced mini dill pickles
Fresh dill for garnish
Instructions--
- Place cream cheese, cheddar cheese, and broth in a blender and puree until smooth.
- Place coconut oil in non-stick frying pan. When oil is hot, add onions and celery and cook, stirring often, for 4 minutes, or until soft. Add the cheesy broth mixture, tuna, and hearts of palm and gently stir to combine.
- Preheat oven to broil
- Sir in pickles, salt, and pepper
- Transfer the tuna and pickle mixture into a serving dish and top with additional cheese. Place under broiler for a few minutes to melt the cheese. Garnish with dill, if desired.
